Pasta with Szechuan Peanut Dressing (someone posted this one in vegrecepies lj)
8 ounces linguine
Dressing:
1/3 cup natural peanut butter, smooth or chunky
1/2 cup hot vegetable stock or hot water, or as needed
1 tsp. low sodium soy sauce
2 tbsp. white rice vinegar
2 tbsp. canola or safflower oil
1 tsp. minced garlic
1/2 tsp. red pepper flakes, or to taste
steamed vegetables like broccoli, asparagus, green beans.....
cherry tomatoes
cook pasta according to package
put all dressing ingredients into blender and blend
toss pasta, steam veggies and peanut sauce together
add tomatoes on a side
eat
ps: i used spinach linguine in this recipe and it came out very good.
